I mean, really, really good, just for you?
If you are a mom, you know what I mean. Everyone and everything else comes first. We go without in order to provide for our children. Right now, I am forgoing my time in order to put in overtime to afford Back-To-School shopping for 2 of the kids.
Well tonight, I did something just for me. I cooked myself dinner. Now I know what you’re thinking. She made herself dinner? Big deal.” It is a big deal. I hate cooking. When the kids are with their dad, I don’t usually cook for myself. Last night, I made nuked a Healthy Choice dinner.
Tonight’s dinner:
Garlic and pepper crusted chicken breast on a bed of lettuce and spinach with carrots and croutons sprinkled with parmesan cheese. It tastes sooo good.

Actually, I made shrimp penne a couple nights ago, even though the big kid is at band camp and the little one won’t touch it with a 10′ pole. So, yep– just for me!
It IS a big deal… I try to do this at least two nights a week. Mmmm, looks so good!
I tried making a grilled shrimp salad tonight. Not as good. I sauted garlic in olive oil, threw in some butter and the shrimp. Added red onions and cucumbers to the salad. But something is missing.
